15-Minute Vegan “Beef” and Broccoli

Why I love it

“Beef” and Broccoli aka the best meal ever created. This is the dish to make when you’re not ready to make a complicated meal, aka during the weekend. It’s one of those seitan recipes that you’ll never forget. This took less than 15 minutes including prep time. Beef and Broc was always my favorite for take away when I ate meat so why not make a “fake away” and enjoy all the delish flavors still? Prior to this recipe, I was not the biggest fan of seitan. This dish changed my mind because the sauce is incredible and the seitan’s texture was on point. The way the broccoli soaks up the sauce is just a beautiful thing too. Become a broc-star and make this dish.

Ingredients

Main Ingredients

  • 1 package unflavored seitan (I used Upton Naturals)

  • 2-3 cups broccoli

  • Olive oil to taste

  • Salt and pepper to taste

  • Optional: white rice, green onions, and sesame seeds

The Sauce 

  • ¼ cup soy sauce

  • 2 tbsps water

  • 1 tbsp brown sugar

  • ½ tbsp cornstarch

  • 1 tsp vegetable base (I used Better than Bouillon)

  • 1 ½ tsps rice vinegar

  • 4 cloves minced garlic

  • ½ tsp minced ginger

Replacements

You can make this with soy curls instead of seitan. Also, you can use liquid aminos as a replacement for soy sauce.

Recipe

1. Whisk together the soy sauce, water, brown sugar, cornstarch, vegetable base, rice vinegar, garlic, and ginger in a bowl and set aside. 

2. Heat up a package of seitan in a large pan with olive oil for a couple of minutes.

3. Add the broccoli to the pan and cook for as long as desired, then whisk the sauce once more and add it into the pan.

4. Cook until the sauce thickens. I topped mine with sesame seeds and green onions and served it with white rice. Enjoy!
