Vegan Loaded Taco Salad

Why I love it

This is one of those easy vegan recipes that you will make on repeat. Tacos are the best so why not make the whole dish into a salad with fresh ingredients? Plus, vegan tacos in salad form are healthier and sometimes more enjoyable. I present to you: vegan Taco Bell. Or what should be sold at Taco Bell. I basically try to do this with any recipe, if I love it, it has to be made into a salad so I have an excuse to keep eating my favorite flavors and ingredients. We used to always have taco salads in huge bowls growing up. In fact, we would call our large bowls “salad bowls”, ah this dish reminds me of home. I typically have these salad ingredients on hand so this is a quick and easy meal too. This is a perfect vegetarian dinner idea as well if you want to include non-vegan taco salad ingredients. The dressing is what really drives home the flavor here. I hope you enjoy this specTACOlar recipe.

Ingredients

  • Main Salad Ingredients

    • 1 package plant-based crumbles (I used MorningStar Farms)

    • 1 can black beans

    • 1 can corn

    • ½ cup diced tomatoes

    • ½ cup diced avocado

    • Lettuce of your choice (I used romaine)

  • Dressing Ingredients

    • ⅓ cup tahini

    • ¼ cup wing sauce (I used the flavor hot honey)

    • ½ cup water

    • ¼ tsp garlic powder

Replacements

You can add any type of bean to this salad, along with your favorite classic taco ingredients.

Recipe

  1. Heat up your crumbles according to package instructions.

  2. Drain and rinse the black beans and corn.

  3. Add the crumbles, black beans, corn, tomatoes, and avocado to a bed of lettuce.

  4. Lastly, make the dressing. Mix together the tahini, wing sauce, water, and garlic powder in a small bowl. Drizzle on top of the salad. Enjoy!
