Miso-Glazed Brussels Sprouts

Why I love it

Do you ever make a dish and think, wow this needs something but I just can’t pinpoint it? Well what it needs is simple, it’s umami! Miso is an umami flavor bomb. I love to use miso paste in my recipes whenever I can. These brussels sprouts are a great vegetarian dinner idea because they’re delicious enough to stand on their own. Why not marry the best flavor with the best vegetable and make miso-glazed brussels sprouts? This combo was just meant to be. Everyday I’m brusselin’.

Ingredients

  • Brussels Sprouts

    • 4 cups halved brussels sprouts

    • Olive oil to taste 

    • Salt and pepper to taste

  • Miso Glaze

    • 2 tbsps water

    • 2 tbsps rice vinegar

    • 2 tsps miso paste (I used red miso paste)

    • 1 tbsp agave

Replacements

You can substitute in maple syrup for agave, or lime juice for rice vinegar.

Recipe

  1. Preheat the oven to 400 F.

  2. Toss the brussels sprouts in olive oil, salt, and pepper.

  3. Preheat a large pan on the stove with olive oil. Cook the brussels sprouts in the pan for 4 minutes on each side or until golden brown.

  4. Finish these in the oven for 20 minutes and flip halfway through.

  5. While these are in the oven, make the miso glaze. Whisk together water, rice vinegar, miso paste, and agave.

  6. Once the brussels sprouts have finished cooking, toss half of them in the glaze. Reserve the second half for dipping. Enjoy!
