Quinoa Crust Pizza

Why I love it

That’s right, the crust is made out of a superfood. I’ve had cauliflower crust pizza before and it is no match for quinoa crust! The quinoa crust is thin and gets very crispy in the oven, it tastes just like regular pizza crust. This pizza will be a big hit for just yourself or if you’re having a pizza night with your family! To me, pizza has always felt like an unhealthy indulgence. This recipe proves that healthier pizza can even be better than the typical carryout kind. The fun part about this recipe is that you can add on any topping you like! You can choose different themes for the pizza such as mexican-inspired, greek-inspired, etc… or just top your pizza with your favorite veggies. I chose to top mine with plump cherry tomatoes and non-dairy feta cheese and it was a beautiful combination. If you want this to be just a vegetarian dinner idea, you can use dairy cheese. Unlike this pizza, this recipe can’t be topped!

Ingredients

  • ¾ cup white quinoa

  • ¼ cup water

  • 1 tbsp olive oil

  • 1 tsp salt

  • ½ tsp baking powder

  • ¾ cup tomato sauce

  • Vegan cheese (I used Violife non-dairy feta)

  • Cooking spray

  • Toppings of your choice

Replacements

You can top this with any veggies or vegan toppings of your choice. For even more protein, you can add crispy chickpeas or beans on top. I would recommend adding these on in the last 5 minutes of baking the pizza so that they don’t dry out.

Recipe

1. Soak the white quinoa overnight in the fridge with about 1 ½  inches of water covering it.

2. The next day, preheat the oven to 425 F and spray a 9 inch circular pan with cooking spray.

3. Rinse the quinoa and add it to a blender with the water, olive oil, salt, and baking powder. Blend until you reach a pancake batter consistency.

4. Pour crust batter into the 9 inch pan and bake for 20 minutes until the edges are golden.

5. Take it out and add the tomato sauce, cheese, and toppings.

6. Bake for 15-20 more minutes. Let it sit for a few minutes so you don’t burn yourself! Feel free to add extra cheese if desired. Enjoy!
