Refreshing Gazpacho

Why I love it

The best soup of the summer, GAZPACHO!! This is the best appetizer ever too. Also, it’s sooo easy, you just throw everything in a blender and you’re done!! Tomatoes are deliciously ripe in the summer so this was perf. If you’ve never tried gazpacho before, you gaz to try this!!

Ingredients:

•1/4 of a cucumber roughly chopped 

•1 rib of celery roughly chopped 

•2 1/2 roughly chopped tomatoes 

•1 1/2 roughly chopped bell peppers of your choice 

•2 tbsps red wine vinegar 

•1 tbsp lemon juice 

•Garlic to taste (cloves or powder)

•Salt and pepper to taste (you’ll need more salt than you think)

•Topping: balsamic glaze, fresh herbs, salt and pepper, squeeze of lemon juice, toasted bread. 

Replacements:

You can take out any of the vegetables that you may not like.

Recipe: 

1. Put the cucumber, celery, tomatoes, bell peppers, vinegar, lemon juice, garlic, salt, and pepper in a blender. Blend until you reach a smooth consistency. Let it cool for 30 minutes. 

2. Top with your fave toppings. Enjoy!!
