TikTok Vegan Tomato “Feta” Pasta

Why I love it

Vegan tomato feta pasta!! If you’ve had a similar recipe then you know. Baking cherry tomatoes makes them super soft and caramelized in flavor. I’d much rather prefer baked cherry tomatoes over eating them raw any day. The tomatoes in combination with the homemade feta are to die for. Grocery stores ran out of feta in Finland because of this trend but they certainly won’t run out of tofu for the vegan version! My version of this dish is so creamy and addicting, it’s going to be impastable to stop eating it! I can’t take my eyes off of tofu after this meal.

Ingredients

For the “feta”:

  • 1 block of firm tofu

  • ½ cup of cashews soaked overnight

  • 1 tbsp apple cider vinegar (I used Bragg)

  • 1 tbsp nutritional yeast (I used Bragg)

  • 1 tsp garlic powder

  • 1 tsp salt

For the rest:

  • Vegan pasta of your choice

  • A container of cherry tomatoes

  • Olive oil to taste

  • Salt and pepper to taste

  • Optional: parsley as a garnish

Replacements

You can replace the tofu feta with store-bought vegan feta but please note that cooking time may vary.

Recipe

  1. Preheat the oven to 400 F.

  2. Combine the tofu, cashews, apple cider vinegar, nutritional yeast, garlic powder, and salt in a food processor.

  3. Add the tomatoes to a pan and drizzle with olive oil, salt and pepper taste.

  4. Shape the tofu feta into a block to resemble feta and place it in the middle of the tomatoes. Then, add more olive oil, salt and pepper to the tomatoes and feta.

  5. Bake for 40 minutes.

  6. Meanwhile, make your pasta.

  7. Take out the bake and stir in the pasta. Top with herbs. Enjoy!
