Why I love it

Have you ever seen nonstop commercials for the latest fast food trend but it’s not vegan? It’s the story of my life. Made with seitan and homemade pickles, my version is better than the McRib from McDonald’s and my plant people don’t have to miss out. This is one of those seitan recipes that you can’t miss. You can finally be included with this delicious McFib.

Ingredients

  • Main Ingredients

    • 1 package seitan (I used Sweet Earth Foods)

    • ¼ cup barbecue sauce

    • ⅓ of a white onion (sliced)

    • Large sub roll

  • Dill Pickles

    • 1 mini cucumber

    • 1 cup apple cider vinegar

    • 1 cup water

    • 1 tbsp sugar

    • 1 tbsp salt

    • 1 tsp red pepper flakes

    • 1 tsp dill

Replacements

You could make this with soy curls instead of seitan.

Recipe

1. Make your own dill pickles! Combine the water, apple cider vinegar, sugar, and water in a pot on the stove and bring it to a boil. Meanwhile, slice up a mini cucumber and add it to a small mason jar. Once the mixture boils, pour it into the mason jar over the cucumbers. Add in the red pepper flakes and dill to the jar and shake gently. Let it sit for at least 10 minutes for the flavors to have time to combine.

2. Heat up seitan on the stove according to package directions. Add in barbecue sauce to the pan and stir.

3. Assemble the sandwich by adding in the seitan, then pickles and white onions in the large roll. Enjoy!
