Cozy Minestrone Soup

Why I love it

Another vegan soup recipe for you! Something that you need in your life is cozy minestrone soup. I forgot that minestrone existed for a minute there and when I rediscovered it, I became addicted. My version is fresh, light, and creamy. It’s also packed with veggies. You’re soup-osed to love this dish because it’s a classic.

Ingredients

  • 14 oz can crushed tomatoes

  • ½ cup diced potatoes

  • 1 ½ cups white beans

  • ¾ cup elbow noodles

  • 1 tbsp nutritional yeast

  • 2 cups water

  • 1 tsp vegetable base (I used Better than Bouillon)

  • ¼ cup diced carrots

  • 1tsp-1tbsp minced garlic cloves

  • ½ of a yellow onion diced

  • ½ tsp red pepper flakes

  • A squeeze of lemon juice

  • Olive oil to taste

  • Salt and pepper to taste

Replacements

You can substitute in any type of noodle. Additionally, if you would like more texture you can use diced tomatoes instead of crushed.

Recipe

1. Sauté the carrots, yellow onion, and garlic with olive oil in a large pot on low heat for 5 minutes.

2. Stir in the red pepper flakes, salt, and pepper. Cook for 10 minutes.

3. Add in the tomatoes, potatoes, water, and vegetable base. Bring it to a boil then lower to a simmer and cover for 20 minutes.

4. Stir in the white beans, elbow noodles, and nutritional yeast and cook for 10 more minutes.

5. Finish with a squeeze of lemon juice and salt and pepper to taste. Enjoy!
