Easy Vegan Ombré Pancakes
Ingredients
•1/4 cup frozen blueberries
•1/4 cup frozen strawberries
•1/4 cup frozen raspberries
•Pinch of salt
•1 cup oats ground into flour
•1 1/2 tsps baking powder
•3/4 cup plant milk (I used soy)
•1 flax egg (1 tbsp ground flax + 3 tbsps water- let this sit for ~10 mins)
•1 tsp vanilla extract
•1 tbsp maple syrup
•1 tbsp apple cider vinegar
Toppings: your frozen fruits and maple syrup of course!
Replacements
You can substitute in aquafaba for a flax egg. Also feel free to use your favorite colored frozen fruit to have fun-colored pancakes!
Recipe
1. Microwave the berries in their own bowls until you can mash them. This takes about 30 seconds.
2. Add oats, baking powder, and salt into one bowl and whisk.
3. In a separate bowl, whisk together your ACV, maple syrup, vanilla, flax egg, and plant milk.
4. Slowly whisk in the wet ingredients with the dry. Divide batter into the 3 separate berry bowls and mix. Cook until the pancakes start to bubble. Enjoy!!
