The Best Vegan Breakfast Burrito

Why I love it

All you need when you wake up in the morning is a breakfast burrito. Who’s with me? Seriously this has all the goodies. Potatoes, tofu scramble, fresh tomatoes, bell pepper, and the best sauce ever! Tofu scramble is the best egg-replacer in the game! Since it’s October, make this and call it a boo-rito!

Ingredients

•1 potato

•1/4 block of tofu

•1 green bell pepper

•1 1/2 tbsps nutritional yeast

•1/2 tbsp black salt

•1/3 tbsp turmeric

•1/2 tsp garlic powder

•1 tortilla

•Chopped tomatoes

•Sauce: 1 tbsp hummus + 1 tbsp water + 1 tsp sriracha

•Olive oil to taste

•Salt and pepper to taste

Replacements

You can add in some vegan sausage and cheese!

Recipe

  1. Cut your potato into wedges and season with olive oil and salt and pepper to taste

  2. Air fry for 13 minutes on 400 F (flip halfway). Meanwhile, roughly chop your tofu. Sauté in a pan with olive oil, nooch, black salt, turmeric, garlic powder and salt and pepper. Mash it up so that it looks like eggs!

  3. Chop and sauté your bell pepper with olive oil, salt, and pepper. Mix together your sauce ingredients. Assemble your burrito with the above ingredients plus tomatoes. Pro-tip, heat up your tortilla for 10 seconds so that it is pliable! Enjoy!
