Why I love it

Sweet potato pancakes! But healthy. But also delicious. These are way better than classic pancakes. They’re so fall/ winter it’ll take care of alllll the cravings. They’re also light and fluffy to enjoy during the warm weather months for an outdoor brunch. If you love sweet potatoes, these are the ones for you. Nothing stacks up to these pancakes.

Ingredients

Dry Ingredients

  • ½ cup oat flour (Blend oats to make this)

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 1 tsp pumpkin spice

  • Pinch of salt

Wet Ingredients

  • ¾ cup cooked sweet potato

  • ¾-1 cup plant milk

  • 1 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • 1 tbsp maple syrup

  • ¼ tsp vanilla extract

Optional Toppings:

  • Maple syrup

  • Melted almond butter

  • Walnuts

  • Vegan marshmallows if you’re feeling festive

Replacements

You can replace oat flour with almond flour.

Recipe

1. Microwave a sweet potato for 5 minutes until it’s cooked through.

2. Start on the dry ingredients. In a large bowl, combine oat flour, baking powder, cinnamon, pumpkin spice, and salt.

3. In a separate bowl, start on the wet ingredients. When the sweet potato has finished cooking, mash it and add it to the bowl. Whisk in the plant milk along with olive oil, apple cider vinegar, maple syrup, and vanilla. If the mixture is too dry, add in more plant milk.

4. Form a well in the middle of the dry ingredients and slowly whisk in the wet ingredients.

5. Spray a large pan on the stove with cooking spray. Use a ¼ cup measurer to make evenly sized pancakes, and flip over when they start to bubble. I topped mine with maple syrup, melted almond butter, and walnuts. Enjoy!
