Maple Baked Oats

Why I love it

This recipe feels like home. Who doesn’t want a soft cookie on top of their baked oats? Who also doesn’t want their oats tasting like maple syrup in the morning? If you know someone, let me change their mind! You may think that baked oats take too long in the morning. I believe quite the opposite- you don’t need to tend to them on the stove, you just place them in the oven and come back when they’re done! This recipe will soon become your go-to delicious and healthy breakfast every morning!

Ingredients

•1/2 cup oat flour (blend quick or rolled oats)

•1 tbsp flax meal

•1 tsp baking powder 

•Pinch of salt 

•1/2 overripe banana 

•1/2 tsp vanilla extract 

•1 tbsp maple syrup

•A handful of walnuts

•1/2 cup plant milk

•A soft cookie of your choice

•A drizzle of peanut butter

Recipe

1. Preheat your oven to 350 F. Mash your overripe banana in a large bowl.

2. Mix in your oat flour, flax meal, baking powder, and salt.

3. Then stir in your vanilla, maple syrup, plant milk, and half of your walnuts.

4. Transfer to an oven safe dish and bake for 15-18 minutes. Top with the rest of the walnuts, your cookie, and a drizzle of peanut butter. Enjoy!

Replacements

You can replace the walnuts with any nut of your choice.
