Espresso Brownie Batter Oats

Why I love it

This is some great inspiration for a good old weekend breakfast. Honestly even during the week I’d prefer to make baked oats because it’s less dishes. Doing dishes is not what you want to be doing on the weekday mornings. Also, mixing all of the ingredients in one bowl just makes it so easy. My personal favorite flavors, and ones that should be yours as well are chocolate, coffee, and peanut butter. The flavors are so balanced, it’s not too sweet. Words cannot espresso how much you’ll love these oats.

Ingredients

•3/4 cup plant-based milk (I used almond)

•3/4 cup rolled oats

•2 tbsps cacao powder (I used Better Body Foods)

•1 tbsp avocado

•1/2 tsp instant coffee 

•1 tsp-tbsp maple syrup or agave

•1/2 tsp baking powder 

•1/8 tsp salt 

•Handful dairy-free chocolate chips (I used Enjoy Life Foods)

•1 tbsp creamy peanut butter 

Replacements

You can substitute almond or sunflower butter for peanut butter.

Recipe

1. Preheat the oven to 350 F.

2. Blend the oats, cacao powder, avocado, instant coffee, milk, maple syrup, baking powder, and salt together until smooth.

3. Fill up a baking dish with 2/3 of the mixture plus some chocolate chips, then add in the peanut butter, then cover it up with the rest of the batter. 

4. Top with more chocolate chips. Bake for 35 minutes. If you want them to be more cooked then bake to your desired consistency. Let them sit for at least 5 minutes so they aren’t too hot! Enjoy!
