Aquafaba Chocolate Mousse

Why I love it

The best flavor combination ever plus fresh pomegranates and crunchy pistachios? How could you say no? The aquafaba takes this up a notch too, making a perfect egg substitution. I personally love chocolate, and the depth of flavor in this vegan dessert is unreal. This mousse is choc-full of the best flavors.

Ingredients

•1/2 cup aquafaba 

•1/2 cup sugar 

•7 ounces dairy free chocolate chips (I used Enjoy Life Foods)

•1/2 tsp cinnamon 

•1/8 tsp chili powder 

Optional toppings: pistachios, pomegranates, and cinnamon sticks 

Replacements

You can omit the chili powder and/or cinnamon if you just want the chocolatey flavor.

Recipe

1. Use room temperature aquafaba and begin to beat it with a hand mixer or stand mixer. After about 5 minutes, start to slowly add in the sugar. Beat until stiff peaks form, mine took 15 minutes total.

2. Melt your chocolate in the microwave in 30 second increments. Let the chocolate come to room temperature before adding it into the aquafaba an sugar or else it will seize.

3. Fold in the chocolate, cinnamon, and chili powder. My recipe served 2 so I poured the mixture into 2 ramekins and topped with pomegranates and chopped pistachios. Put in the fridge to cool for at least 1 hour. Enjoy!
