Why I love them

Vegan cookies are tough to master. Lucky for you, these vegan matcha cookies are the perfect light, subtle, and delicious dessert. I’ve LOVED matcha since a little over a year ago and I don’t know how I lived that long without having it in my life. I’ve tried ceremonial grade and culinary grade and many different brands of both. Needless to say, I’m a fanatic. But back to the cookies- you would never know that they’re vegan. The flavors are balanced and come together to form the perfect bite. If you’ve ever used a flax egg, you’ll know these will turn out amazing because they’re the perfect egg replacer! You and these vegan cookies will have made your match(a) and you will become obsessed.

Ingredients

  • ½ cup vegan butter (I used Country Crock)

  • ½ cup sugar

  • 1 ½ tsps matcha (I used Rishi)

  • 1 flax egg (1 tbsp ground flax mixed with 3 tbsps water and let sit for 10 minutes)

  • 2 tsps vanilla extract

  • 1 cup + 1 tbsp flour

  • ½ tsp baking powder

  • ¼ tsp salt

Replacements

Feel free to top this with flaky salt!

Recipe

1. Add in the vegan butter, sugar, and matcha to a stand mixer. You can also mix this by hand.

2. After combined, mix in the flax egg and vanilla extract.

3. Then, sift the flour and add it to the bowl with baking powder and salt. Make sure you don’t overmix at this stage.

4. Cover the bowl and place it in the fridge for 45 minutes. Preheat the oven to 350 degrees F.

5. Form dough into balls about 1 tbsp in size. Press them down to flatten into cookie shapes on a parchment-lined baking sheet. Make sure you do this part or else they will be more like spheres.

6. Bake for 10-13 minutes until the edges are golden! Enjoy!
