Creamy Vegan Miso Tahini Pasta

Why I love it

This is packed with flavor and topped with the best. Seriously the toppings of breadcrumbs, sesames, cilantro, and red pepper flakes omg. Also when I eat this for leftovers I love adding on crispy tofu! This dish makes miso happy :)

 

Ingredients

Miso tahini paste:

•1/4 cup tahini

•2 tsps miso

•Splash of lime juice

•1/2 tsp garlic powder

•1 tsp sriracha

Other:

•Soba noodles or high protein chickpea or other bean pasta 

•1 tbsp-1/4 cup pasta water

•3 sliced mushrooms 

•Sesame oil to taste 

Toppings:

•Panko bread crumbs 

•Black and white sesame seeds

•Cilantro

•Red pepper flakes 

•More mushrooms 

 

Recipe

1. Boil your pasta according to package instructions.

2. Stir together your miso tahini paste. 

3. Add sesame oil to a pan and cook your mushrooms on low for 10 minutes. I took out half to top with them.

4. Add your cooked pasta directly into the pan, allowed some pasta water to come with. Add in your paste until everything has combined. 

5. Take off the heat and top with your favorites. Enjoy!
