Oil-Free Creamy Pesto Pasta

Why I love it

Another one of my delicious vegan pasta recipes! This 10-minute oil-free pesto pasta is addicting and oh so comforting. I’ve never been a pesto lover because I always felt that it’s missing something. I discovered the secret ingredient: cream cheese! I don’t know about you, but when I make a pesto I want it creamy but also fresh, and this is the pesto both worlds!

Ingredients

•1 container vegan herb cream cheese (I used Spero)

•4 cups basil or parsley

•2 tbsps lemon juice

•1 tsp onion powder

•1/2 tsp garlic powder

•1/3 cup water

•Salt and pepper to taste

•Pasta of your choice (I used Banza)

•Optional toppings/sides: red pepper flakes, parsley flakes, vegan bread

Replacements

You can add in spices of your choice.

Recipe

1. Cook your pasta with heavily salted water.

2. Combine the cream cheese, fresh herbs, lemon juice, and water in a blender and blend until smooth.

3. Add the cooked pasta and pesto to a large pan. Toss the pasta to coat and add in the onion powder, garlic powder, and salt and pepper to taste. Let this cook for a couple minutes and you’re done! I topped mine with parsley flakes and red pepper flakes. Enjoy!
