Mediterranean Tofu Kabobs

Why I love it

The most creative way to serve tofu- tell me it doesn’t look just like chicken. This is just packed with flavor because the marinade was to die for. The tomato paste with the peanut butter with the spices, wow! Then you let it marinate for 1 hour and air fry it to crispy goodness then abreKEBABra, you’ll get the tastiest kebabs. Serve it with your favorite sides for an even better meal!

 

Ingredients

•1 block extra firm tofu 

•2 tbsps peanut butter 

•3-4 tbsps water 

•1 tsp onion powder 

•1 tsp cinnamon 

•1/2 tsp chili flakes 

•1/2 tsp ground ginger 

•1 tbsp tomato paste 

•1 tbsp olive oil

•1 tbsp lemon juice 

Optional: serve with white basmati rice, hummus, and Israeli salad

Replacements

You can replace the peanut butter with any nut butter.

Recipe

1. Press a block of tofu for at least 10 minutes.

2. Roughly chop or tear apart tofu into irregular shapes and set aside.

3. Blend together water, onion powder, cinnamon, chili flakes, ginger, tomato paste, peanut butter, and olive oil to form a your marinade sauce. 

4. Mix the sauce with the tofu with a rubber spatula so that the tofu doesn’t break apart. Let marinate in the fridge for at least an hour.

5. Place 3 pieces of tofu on each skewer. Air fry for 15-20 minutes on 400 F and flip halfway. Serve with basmati rice, Israeli salad, and hummus. Enjoy!
