Rigatoni alla Vodka

Why I love it

This is an easy yet ~fancy~ recipe to try for the weekend! Plus, it has vodka in it, so that’s always a good time. JK, the vodka cooks out, don’t worry! This is the best vodka sauce pasta I have EVER had. If you haven’t tried making it before, it is very simple and worth making it yourself. It’ll make you want to eat more and more of it til it’s all gone. Turn uppppp!!

Ingredients

•Pasta of your choice (I used rigatoni)

•1 tsp garlic powder 

•1 tsp onion powder

•1 28 oz can crushed tomatoes 

•1/2 cup raw cashews

•2/3 cup vodka 

•Fresh herbs (I used parsley)

•2 tbsps olive oil

•Salt and pepper to taste

Replacements

You can add in your favorite seasonings for the vodka sauce. Feel free to use any pasta shape of your choice too!

Recipe

1. Cook the pasta according to package instructions. 

2. Toast the garlic and onion powder in a large pan on low heat with olive oil for 3 minutes.

3. Pour the vodka into the pan to deglaze it and let it cook for 10 minutes. 

4. Stir in the crushed tomatoes and cook for 10 additional minutes. 

5. Transfer to a blender and add in the cashews. Add salt and pepper to taste.

6. Toss the pasta in the sauce and top with fresh herbs. Enjoy!!
