The Best Vegan Caeser Salad

Why I love it

Kale cae-sal, you got to love it! Caeser salad is just a classic. This version is so delicious and SO easy to make. This post also includes recipes to homemade vegan parmesan and crispy croutons in here! Trust me, they’re worth making. I don’t know about you, but I crave salads all year round, so this one is definitely my go-to! Once you make this you’ll yell KALE Yeah!

Ingredients

Main:

•6 ounces of kale

•1/3-1/2 cup of store bought or homemade vegan caeser dressing

•Juice of 1/2 a lemon


Homemade Croutons:

•2 slices of sourdough diced up

•Olive oil to taste 

•Salt to taste 


Cashew Parm:

•3/4 cup cashews 

•3 tbsps nutritional yeast

•3/4 tsp salt

•1/4 tsp garlic powder 

*you will have extra!

Replacements

If you’re not a kale lover, you can replace it with romaine.

Recipe

1. Massage the caeser dressing along with the juice of half a lemon into the kale.

2. Make the croutons by tossing the bread in olive oil and salt to taste and air fry on 350 F for 3-5 minutes.

3. Make the cashew parm by blending the cashews with nutritional yeast, salt, and garlic powder. Serve the massaged kale with the croutons and cashew parm on top, along with the rest of the lemon sliced up. Enjoy!
