The Best Vegan Pineapple Fried Rice

Why I love it

Why is eating food out of pineapples that much better? Let me know. Cooking pineapple gives it such a different taste from eating it raw, I highly recommend it. This dish is so balanced and tropical, you should be eating it on repeat in the summertime. Also the best part of making fried rice is that you can add your favorite ingredients into it. So customizable! If you were a fruit, you’d be a fineapple.

Ingredients

•1 pineapple

•1 cup cooked rice 

•1/4 cup diced carrots

•1/2 can chickpeas 

•1 cup mushrooms 

•1/4 cup cashews 

•2 garlic cloves minced 

•1 tsp ground ginger

•1 tsp red pepper flakes

•2 tbsps sesame seeds

•1 green onion

•Cilantro

•1 lime

•2 tbsps soy sauce, or to taste

•Oil to taste

•Salt and pepper to taste

Replacements

You can replace pineapple with mango in this recipe.

Recipe

1. Cut your pineapple in half. On each half, cut an outline of a rectangle about 1/2 inch deep. Carefully scoop out the pineapple. Cut those pieces into small cubes.

2. Add the white and light green parts of your green onion, mushroom, carrots, and garlic to a pan with oil. Cook for a couple of minutes until fragrant and the veggies have cooked down.

3. Stir in your ground ginger, red pepper flakes, sesame seeds, pineapple, and cooked rice. Move around in the pan at first and then let it cook for 3 minutes and flip. This gets the rice crispy. 

4. Stir in soy sauce and the juice of 1/2 of a lime and cook for desired consistency.

5. Air fry your chickpeas with salt and pepper for 5 minutes or until crispy. 

6. Serve your rice inside of your pineapple, and top with the crispy chickpeas, green onions, cilantro, and more lime juice to taste. Enjoy!
