Vegan Broccoli Cheddar Pumpkin Pasta
Ingredients
•2 slices vegan cheddar cheese
•Handful of broccoli
•1 box pasta
•2 tbsps pumpkin purée
•1 tsp garlic powder
•1/4 cup cashews
•2 tbsps water to blend with cashews
•1/2 tsp ginger
•1/2 tsp smoked paprika
•1/4 tsp clove
•1/4 tsp cayenne
•Juice of 1/2 a lemon
•Pasta water to thin out to your liking
•Red pepper flakes
•Parsley
•Olive oil to taste
•Salt and pepper to taste
Replacements
You can substitute in your favorite vegan cheese.
Recipe
1. Boil your water for pasta.
2. Add your spices to a pan with olive oil to toast them.
3. Blend your cashews with water. Add to the pan along with your vegan cheese and pumpkin purée. Stir and cook for about 5 minutes on medium heat, and make sure the cheese melts. Add in your cooked pasta and top with red pepper flakes, salt, and pepper. If it needs to be thinner, add some pasta water. Squeeze with lemon juice and top with parsley. Enjoy!
