The Best Vegan Chickpea Tuna Salad

Why I love it

Vegan chickpea tuna salad sandwich! Or rather “chuna” sandwich. This has been my go-to sandwich for over a year now when I’m taking a sandwich on the go! I especially love bringing these to the beach because they’re so easy but also wholesome! This tastes a lot like tuna but it’s so much better. Using hummus as the base sauce is my fave cooking hack because who regularly buys vegan mayo? Hummus is so accessible and healthier too! I have another vegan tuna recipe on my blog too! Ingredients

•1 can chickpeas

•1/4 cup celery

•1/4 cup red onion

•1/3 cup hummus

•1 tbsp mustard

•1 tbsp hot sauce (or to taste- this is pretty spicy)

•Juice of 1/2 a lemon 

•1 tsp nori granules (blend up 1/8 of a sheet of nori)

•1/2 tsp garlic powder

•Salt and pepper to taste


Sandwich:

•Your favorite bread

•Heirloom tomato slice

•Arugula

Recipe

1. Add your chickpeas to a bowl and mash half of them. Stir in diced celery, red onion, hummus, hot sauce, mustard, lemon juice, nori, garlic powder, salt, and pepper. 

2. Load up your sandwich with about 1/3 of the chickpea salad and top with tomatoes and arugula. Save the rest for sandwiches to come. Enjoy!

 

Replacements

You can replace the chickpeas with vegan tuna.
