Creamy Tomato Orzo

Why I love it

One pot fresh and creamy tomato orzo! These tomatoes seriously made this dish unreal, and having them as a cooked and raw element just elevated the dish. I highly recommend getting locally ripened tomatoes for this dish. The orzo is cooked so perfectly too, make sure you follow my directions below! You going to make this, or zo??

Ingredients

•1 cup chopped tomatoes 

•1/2 tsp garlic powder

•1/2 tbsp cayenne

•1/2 tsp oregano

•1/2 cup white beans

•1/2 cup orzo 

•1 1/4 cup water 

•1 tsp vegetable base

•Salt and pepper to taste

•Olive oil to taste 

•Garnish: parsley and more tomato slices

Replacements

You can replace the whole tomatoes with cherry tomatoes.

Recipe

1. Add olive oil to a pan and sauté your tomato with spices and white beans.

2. Add in your orzo, vegetable base, and water and bring to a boil, then cover and lower to a simmer.

3. Cook for 10-15 minutes until most of the liquid has absorbed. Take off the heat and let it cook with residual heat, you don’t want this to get dry. Top with more tomatoes and parsley. Enjoy!
