Tofu “Chorizo” Avocado Toast
Why I love it
The best recipe for Toast Tuesday. This recipe is inspired by a coffee shop down the street that made something similar. They made a tofu chorizo avocado toast with tomatoes. I want to say I nailed it. The way this tofu crisps up is to die for. Give this high-protein avocado toast a try!
Ingredients
Tofu “chorizo:”
•1/2 block firm tofu
•1 tsp cayenne
•1/2 tsp chili powder
•1/2 tsp smoked paprika
•1/4 tsp garlic powder
•Salt and oil to taste
Everything else:
•1 avocado
•2 tomato slices
•2 slices of bread toasted
•Salt and pepper to taste
Recipe
1. Add your tofu to a pan with oil on medium heat. Break it into tiny pieces so they get crispy. Add in your spices and continue to stir. Cook until crispy, this took about 20 minutes.
2. Meanwhile, cut your avocado, tomato, and bread. Toast the bread. When the tofu is done, make your toast with the avocado, tofu chorizo, tomato, salt and pepper. Enjoy!
