5-Minute Black Bean & Corn Salad

Why I love it

This 5-minute fresh snack is incredible for meal prep. Who doesn’t like easy vegan recipes? Whenever I’m hungry, bam! I have this healthy salad ready to go! Also I don’t think I’ve ever mentioned that I love corn. It reminds me of summer, so make sure you come back to this recipe for your summer barbecues this year️! I don’t mean to be corny but this black bean corn salad is the best if I do say so myself!

Ingredients

Ingredients

  • ½ of a diced yellow onion

  • ½ of a diced jalapeño

  • 1 can black beans

  • 1 can corn

  • Small handful radishes (diced)

  • Small handful cherry tomatoes (diced)

  • Juice of a lime

  • 1 tsp chili powder

  • Salt and pepper to taste

Replacements

You can use fresh corn instead of canned. Instead of lemon juice you can add in lime juice.

Recipe

1. Add the onion, jalapeño, radishes and cherry tomatoes to a bowl.

2. Add in the cans of drain and rinsed corn and beans. Stir in the juice of a lime, chili powder, and salt and pepper to taste. Mix together and enjoy!
