Black Bean Taquitos
Ingredients
2 diced red onions
1/2 of a diced jalapeño
2 cans black beans
1/4 cup-1/2 cup water
1/2 tsp chili powder
1/2 tsp cumin
1/2 tsp garlic powder
The juice of a lime
1 tbsp maple syrup
Small corn tortillas
Vegan queso (I used 365 plant-based queso)
Vegan cashew cheese (I used Mikonos Creamery)
Olive oil to taste
Salt and pepper to taste
Optional toppings: more lime juice and cilantro
Replacements
You can make this with pinto beans instead of black beans.
Recipe
Sauté the red onions and jalapeños in a large pot with olive oil, salt, and pepper for 10 minutes on low heat.
After they cook down, add in the chili powder, cumin, and garlic. Also stir in 2 cans of beans. Mash half of the black beans with a spoon in the pot with enough water to get the mashing going. Then, stir in the juice of a lime and maple syrup. Cook for 5-7 minutes and add salt and pepper to taste.
Heat up small corn tortillas in the microwave for 15 seconds to make them pliable. Fill with vegan cheese and beans. I used both vegan queso and sundried tomato garlic cashew cheese. Spread the queso on the whole tortilla and then place a thin block of the sundried tomato garlic cheese in the middle. Next to that, fill it with a strip of 2 tbsps of the black beans.
Roll the tortilla into a taquito shape and spray your air fryer with cooking spray. Place the taquitos seam side down, and then spray the top of the taquitos as well.
Air fry on 400 F for 6 minutes. I made 20 of them so this was done in batches. If you want to bake them you can on 425 F for 15-20 minutes as well. Enjoy!
