Black Bean Taquitos

Why I love it

This is the best appetizer inspiration. What do you call a little taco? A taquito! These vegan black bean taquitos are a perfect appetizer for any occasion. Once you make these, you’ll be dreaming of these and their air fried glory for quite some time. 7/11 I’m coming for you!

Ingredients

  • 2 diced red onions

  • 1/2 of a diced jalapeño

  • 2 cans black beans

  • 1/4 cup-1/2 cup water

  • 1/2 tsp chili powder

  • 1/2 tsp cumin

  • 1/2 tsp garlic powder

  • The juice of a lime

  • 1 tbsp maple syrup

  • Small corn tortillas

  • Vegan queso (I used 365 plant-based queso)

  • Vegan cashew cheese (I used Mikonos Creamery)

  • Olive oil to taste

  • Salt and pepper to taste

  • Optional toppings: more lime juice and cilantro

Replacements

You can make this with pinto beans instead of black beans.

Recipe

  1. Sauté the red onions and jalapeños in a large pot with olive oil, salt, and pepper for 10 minutes on low heat.

  2. After they cook down, add in the chili powder, cumin, and garlic. Also stir in 2 cans of beans. Mash half of the black beans with a spoon in the pot with enough water to get the mashing going. Then, stir in the juice of a lime and maple syrup. Cook for 5-7 minutes and add salt and pepper to taste.

  3. Heat up small corn tortillas in the microwave for 15 seconds to make them pliable. Fill with vegan cheese and beans. I used both vegan queso and sundried tomato garlic cashew cheese. Spread the queso on the whole tortilla and then place a thin block of the sundried tomato garlic cheese in the middle. Next to that, fill it with a strip of 2 tbsps of the black beans.

  4. Roll the tortilla into a taquito shape and spray your air fryer with cooking spray. Place the taquitos seam side down, and then spray the top of the taquitos as well.

  5. Air fry on 400 F for 6 minutes. I made 20 of them so this was done in batches. If you want to bake them you can on 425 F for 15-20 minutes as well. Enjoy!
