Vegan Caprese Salad

Why I love it

Summer vegan caprese salad!! You know what makes this app extra summery? GRILLED NECTARINES! Yes not peaches lol. I personally am a huge nectarine fan. How about you?? I love this salad from my head to-ma-toes.

Ingredients

•1-2 small tomatoes
•1-2 small nectarines
•1/2 block firm tofu
•Fresh basil
•Olive oil to taste
•Salt and pepper to taste
•Balsamic glaze to taste
Optional: serve on fresh bread.

Replacements

You can sub in vegan mozz.

Recipe
1. Slice your tomatoes and nectarines into thin and even slices. Press your tofu.

2. Heat up a pan or grill and keep the nectarines on until they have a nice char on them (takes about 3-5 minutes).

3. Cut out tofu into circle shapes. I used the top of a mason jar to trace. After you have a large cylindrical shape, slice the tofu horizontally into thin pieces. (Save the leftover tofu for a nice scramble).

4. Assemble your caprese salad with the tofu, tomato, grilled nectarine, and basil. Top with olive oil, salt, pepper, and balsamic glaze. Serve with bread or on its own. Enjoy!
