Vegan Corn Ribs

Why I love it

Vegan corn ribs!! The perfect summer side/app/meal let’s be honest. You can grill this or air fry it- but I’m so biased and love how crispy the air fryer gets this elote. The dry rub and bbq sauce combo is unreal. Be corny and make this for your next barbecue!!

Ingredients

•4 ears of corn
•1/2 tsp smoked paprika
•1/2 tsp garlic powder
•1 tsp cumin
•1 tsp brown sugar
•2 tsps chili powder
•3/4 cup bbq sauce
•1/2 tbsp olive oil
Toppings of your choice: cilantro, vegan cheese, and lime.

Replacements

You can add on all of your fave elote toppings!

Recipe
1. Cut your corn into 4 pieces lengthwise. I recommend cutting through the top and down along the cob. Pro tip- boil them for as long as necessary so it’s easier to cut them.

2. Mix the spices together for the dry rub and cover the corn.

3. Then stir the bbq sauce and olive oil together and brush on the corn.

4. Air fry on 400 F for 12 minutes and flip halfway. You could also grill them until tender.

5. Top with your fave flavors! Enjoy!
