Vegan Breakfast for a Queen

Why I love it

Make this for your next waffle Wednesday. Treat yourself with this breakfast for a queen or king! I’m not only giving you waffles with the syrup drizzle, but I’m giving you a whole damn brunch!! Something about waffles just makes me feel nostalgic. Why not enjoy waffles in your adulthood too? Also isn’t it crazy how this is vegan? It blows my mind. What’s your fave brunch food?? I have a b(r)unch of them!

Ingredients

Omelette:

•1/3 cup vegan egg (I used Just Egg)

•1/8 an onion diced 

•1/4 bell pepper diced 

•1 small mushroom sliced 

•3 cherry tomatoes sliced

•Small handful of spinach 

•Handful of vegan cheese

Hash browns:

•1/2 of a potato diced 

•Salt and pepper to taste 

Waffles:

•1 cup oats

•1/2 cup milk

•1/4 tsp baking powder

•Pinch salt

•1/2 tsp cinnamon 

•Berries on top 

•Maple syrup to taste 

Avocado toast:

•1 slice of toast

•1/2-1 avocado

•Red pepper flakes

•Salt

•Agave drizzle 

Recipe

1. Dice up your potato and season it. Air fry on 400 F for 12 mins (flip halfway).

2. Blend together the oats, milk, baking powder, salt, and cinnamon for the waffles. Preheat a waffle iron and spray. Pour about 1/4 cup into each waffle slot. Close and take out when the steam starts to slow down (about 5 minutes). Top with berries and maple syrup.

3. Make your omelet. Separately sauté your veggies. Once they’re done, remove them from the pan and pour in the just egg. Add in the veggies and vegan cheese. Fold over once it has cooked for about 4 minutes, and cook for a remaining few minutes until it isn’t runny. 

4. Toast your bread and add avocado on top with your fave toppings!! YUM enjoy!!

Replacements

You can substitute in regular flour for the waffles, just make sure you know the right ratio!
