The Best Vegan No-Bake S’mores Pie

Why I love them

Who doesn’t love s’mores? Like come on!! This pie is perfect for summer, or really any time of year. This no-bake pie is just incredible. The best part of it is that it’s not too sweet, it’s perfectly balanced!! Not to mention it’s SO easy to make. You’ll want s’more of this. 

Ingredients

•1/2 cup vegan chocolate chips

•1 tsp coconut oil 

•Graham cracker crust (I used Keebler’s)

•Vegan marshmallows (I used Dandies)

Filling:

•1 1/2 cups cashews soaked overnight

•1/2 cup light coconut milk (I used Native Forest)

•1/3 cup melted and cooled coconut oil

•1/3 cup maple syrup

•2 tbsps lemon juice 

•2 tsps vanilla extract 

Replacements

Feel free to make your own graham cracker crust.

Recipe

1. Add the cashews, coconut milk, coconut oil, maple syrup, lemon juice, and vanilla to a blender. Pour into graham cracker crust and freeze for at least 3 hours.

2. Melt the chocolate with coconut oil. Pour over the cashew filling. Add some marshmallows. Put it into the fridge until the chocolate sets. Enjoy!
