1 Pan Vegan Stir Fry

Why I love it

This recipe is a great way to add extra protein into your vegan pantry stir fry! If you’re ever out of chickpeas, edamame, tofu, or any vegan protein, I recommend always keeping chickpea rice on hand. It’s high in protein and is an essential in this pantry stir fry. Also this recipe comes together to quickly and tastes unreal.

 

Ingredients

•Any veggies you have

•1/3 cup rice (I used chickpea rice bc it’s high in protein) 

•Peanut sauce: 1/4 cup peanut butter + 1 tbsp maple syrup + 1 tbsp soy sauce + 1/2 tbsp sriracha + 1/2 tsp garlic powder + a splash of water and lime juice 

•Olive oil to taste

Garnish:

•Green onion

•Red pepper flakes

•Sesame seeds

 

Recipe

1. Add olive oil to a hot pan. Sauté your veggies until they soften. Add in your peanut sauce, rice, and water. Bring to a boil and lower to a simmer and cover for 10-15 minutes.

2. Mix everything together and add your toppings. Enjoy!
