The Best Vegan Burrito
Why I love it
Feast your eyes on the best burrito yet. So the tofu looks just like ground meat right? It’s so crumbly and delicious. Pair that with every amazing burrito ingredient (i.e. guac) and you’ll have yourself the best burrito! Be my bae-rito and give this a try!
Ingredients
•1/2 block firm tofu, salt and pepper to taste, 1.5 tbsps soy sauce, 1 tbsp nutritional yeast, 1/2 tsp cayenne, 1/2 tsp chili powder, 1/2 tsp smoked paprika, and 1/4 tsp garlic powder
•Sweet potatoes- Peel then cut into cubes and air fry with oil, salt, and pepper
•Vegan refried beans- 1 can pinto beans, 1/2 tsp garlic powder, pepper, 1 tsp vegetable base, splash of lime juice, splash of water
•Guac- 1 avo, salt, and lime juice to taste
•Pico- diced tomato, onion, salt, and lime juice to taste
•2 tbsp shredded vegan cheese @vevan.foods
•Grilled onion- olive oil, salt, and pepper
•Your fave tortilla
•Hot sauce
•Vegan yum yum sauce (1 tbsp hot sauce, 2 tbsps hummus, splash of water)
Recipe
1. Break up your tofu and cook with your seasonings in a pan on medium heat until the edges get crispy.
2. Add your pinto beans to a separate pan with vegetable base, garlic powder, water and lime juice. Mix in the vegetable base and mash the beans. Continue to add water and mash. Take off the heat once the water is absorbed and the vegetable base is evenly distributed. I cook these for 5-7 minutes.
3. Air fry your sweet potato on 400 F for 12 minutes.
4. Make your guac and pico. Pan fry your sliced onion.
5. Heat up your tortilla for 15 seconds. Add all of these ingredients to the middle of your tortilla plus vegan cheese and sriracha. Toast in a pan with olive oil on all sides until crispy. Dip in yum yum sauce. Enjoy!
