Vegan Sweet and Sour Cashew “Chicken”

Why I love it

This seriously hits the spot. The idea came from one of my favorite Chinese meals growing up, chicken with cashews and sweet and sour chicken. The chicken is tofu of course, wouldn’t have it any other way. Eating it out of the pineapple boats is a dream.

 

Ingredients

Main

•1 block extra firm tofu

•1 tbsp olive oil

•1/4 cup cornstarch 

•1 pineapple

•Handful of cashews 

•Rice

•Green onions

•White and black sesame seeds 

Sauce

•1/3 cup maple syrup

•1/4 cup liquid aminos or soy sauce

•1/2 tbsp lemon juice 

•1 tbsp olive oil

•1 tbsp cornstarch

•1/2 tsp smoked paprika

•1/2 tsp onion powder 

•1/4 tsp cayenne

 

Recipe

1. Cook your rice according to package instructions. Press out some liquid from your tofu. Tear the tofu into small rectangles.

2. Stir in the cornstarch and olive oil with the tofu. Air fry on 375 F for 15 minutes (flip halfway) until golden.

3. Whisk together the sauce ingredients. Cut your pineapple in half to use as a bowl. Cut out some squares and add to a pan. Add the sauce and cooked tofu. Cook on medium until the sauce starts to bubble. Mix it all together.

4. When the rice is done, add it to the pineapple along with the pan mixture. Add on green onions and sesame seeds. Enjoy!
