Why I love it

Homemade. Vegan. Queso. 3 words, 1 bowl of creamy, cheesy queso. Have some friends over and serve em’ up an app platter that they deserve! Low key the veggie platters are my favorite app at any celebration. There’s just something about dipping anything you want in queso that’s so satisfying. I hope this doesn’t come off as cheesy, but this is my favorite dip.

Ingredients

  • Cheese Sauce

    • 2 cups gold potatoes

    • 1 cup carrots

    • ½ cup cashews

    • 4 tbsps nutritional yeast

    • 2 tbsps hot sauce

    • 1 tbsp lemon juice

    • 1 tbsp garlic powder

    • 1 tbsp onion powder

    • Salt and pepper to taste

Replacements

You can add in coconut milk instead of cashews to make it creamy. If you don’t the queso to be spicy, omit the hot sauce.

Recipe

  1. Boil the potatoes and carrots until tender. Reserve 2 cups of the water to use in the sauce and let it cool.

  2. Blend up that water with the cooked potatoes and carrots. Also add in the cashews, nutritional yeast, hot sauce, lemon juice, garlic powder, onion powder, salt, and pepper. Blend until you reach a smooth consistency. Serve the queso with your favorite chips, fruits, and veggies. Enjoy!
